Is there currently anything or any combination of modules that can act as an alternative to Shapechanger? Thanks

2 x Arch and Bridge can get close.
I was using a similar set up before i got a Shapechanger.

Or alternatively, what can a shapechanger can do that a staircase paired with arch cannot (I have those)?

You have more control on the “shape” shape. With staircases you just do the mirror things to have a quadilateral shape. but 2 staircase plus bridges plus passage and arch, you can do a lot.
